Pumpkin Bread

This is one of my favorite things to make around this time of year. Just cut a slice and put a little butter on it, it's so good! You can either make 3 small loaves, 2 larger loves, or a couple dozen muffins. You could also pour all the batter into a bundt pan and then drizzle a glaze (2 cups powdered sugar, 2 tbs milk, 1 tsp vanilla) on top


Pumpkin Bread

Ingredients
-1 15oz can pumpkin puree
-4 eggs
-1 cup vegetable oil
-2/3 cup water
-3 cups sugar
-3 1/2 cups flour
-2 tsps baking soda
1 1/2 tsps salt
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp ground cloves
1/4 tsp ginger

Directions:

Preheat oven to 350. Grease pan. Mix together pumpkin, eggs, oil, water, and sugar until well blended. In a separate bowl, stir together flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger. Stir the dry ingredients into the pumpkin mixture until blended. Pour into pans. Bake muffins for about 12 minutes, small loaves for about 50 minutes, and large loaves for about an hour. When you think they are done, poke a toothpick in the center and if it comes out clean, it's done!

*Tip* If you have a regular KitchenAid mixer (not the large capacity) do not, I repeat DO NOT, double this recipe. Someone you MIGHT know MIGHT have tried this and MIGHT have had a large mess to clean up after doing so.
